Raw vegan lemon tart, a cool fix for summer nights

What do you do with an abundant lemon harvest?

We’ve used ours to make candied lemons, lemon-infused oil and facial scrub with its ground seeds. We also love using the fruit to bake desserts and make juices.

We’ve adapted our favorite vegan citrusy tart to a no-bake version for the long, hot summer months. It is quick to make and great to have your kids try their hand at, since it requires no elaborate kitchen skills.

Ingredients (serves 6)

For the base

1 cup raw oats

1/4 cup chia seeds

1/2 cup pitted dates (or pure date molasses)

1 handful of cashews

1/3 cup coconut oil

For the filling

1 1/2 cups unsweet coconut cream

Juice from 1 lemon

Prep time

10 minutes

Cooking time

10 minutes (in freezer)

Total time (prepping + freezing)

20 minutes


For the base

  • Blend all ingredients in a blender with an S-blade, for 5 minutes on high speed.
  • Line a loaf pan with parchment paper, then transfer the base mixture from the blender to the pan with a spatula.
  • Freeze immediately, for at least 5 minutes.

For the filling

  • Juice a lemon using a strainer to strain seeds. Set seeds aside to replant or grind into a facial scrub.
  • Whip all ingredients in a blender with whipping wires, on high speed for 5 minutes.
  • Remove the base from the freezer and fill it with the whipped cream, helping yourself with a spatula.
  • Freeze at least 15 minutes. Once you take the cake out of the freezer, let it sit for 2-3 minutes before serving.
  • Slice thick, then top with lemon zest, a sprinkle of grated vanilla bean and your favorite berries.
